Amazing Creamy Garbanzo Bean Salad

This recipe happened on accident. I have a son that does not like meat very much. I wouldn’t say he is a vegetarian but he just has an ick factor when it comes to certain meats right now. I remember having the same feelings when I was a child but I eventually grew out of it. Well, because of this, when I make my favorite chicken salad I found that he would not eat it, even though he loved the flavor. So the other day I decided to experiment and see if I could come up with a meat free alternative as a salad that can be eaten alone, on bread or eaten with chips. This creamy and zesty garbanzo bean salad is so flavorful and amazingly easy to make!

The main thing that I love about this garbanzo bean salad or chick pea salad is that it can be made with simple ingredients, there is no prep and it is inexpensive to make! You literally use some of the most simple ingredients to make this an amazing lunch or snack. 

Lets talk about what is in this garbanzo bean salad:

Well, to start, there is obviously garbanzo beans! But aside from that the ingredients include chopped cabbage, diced red bell peppers, sliced green onions. The dressing ingredients include greek yogurt, mayo, dried or fresh dill, dijon mustard, white wine vinegar(or red wine vinegar ), sugar and salt! You could add more veggies including cherry tomatoes, fresh parsley, feta cheese, red onion and so much more! You could even add cucumbers to make this more of a mediterranean chickpea salad, but I would recommend eating it sooner because the cucumbers will sweat and wilt down in the salad.

This salad can be whipped up in a matter of minutes. When I fail to plan and dont have any thawed chicken to cook, this is the perfect go to. Actually, it is becoming a preferred go to! We love having this and we have it often! 

My favorite way to eat this salad is to use Milton’s Gluten Free Crackers. They are so crisp and crunchy and are perfect with this garbanzo bean salad. This would also be great in a lettuce wrap, or a tortilla wrap. I even eat it by the spoonful. 

I have been using cabbage quite often lately in my recipes. I feel as if cabbage is an often forgotten vegetable. I love using it in salads because it holds up to the dressing and does not wilt like regular lettuce will. This is important because it means you can keep this in the fridge for a couple of days. The flavors only get better! Make sure to store it in an airtight container

With these fresh ingredients combined with the canned beans, this simple chickpea salad has so much delicious flavor and it a healthy salad you can enjoy! The red bell pepper adds a great contrasting flavor to the cabbage and compliments the chick peas.

How to make this easy chickpea salad recipe:

This salad is so simple. Take a can of rinsed and drained garbanzo beans, and roughly mash them in a medium bowl. Add the chopped veggies to the bowl as well.

Mix up the salad dressing in a small bowl (I add salt and black pepper to taste) and then pour over the top of the veggies and mix together well. Eat immediately or put it in the fridge for about 30 minutes to let the ingredients combined.

This is an amazing alternative to using meat in a salad. With the creamy salad dressing, the crisp of the cabbage and bell pepper, as well as the creamy and firm texture of the garbanzo beans it is a flavorful and enjoyable salad to eat!

Equipment

  • 1 can Garbanzo beans rinsed and drained
  • 1/4 head of cabbage finely chopped
  • 1/2 red bell pepper finely chopped
  • 3-4 green onions sliced

Ingredients
  

  • 1 can Garbanzo Beans rinsed and drained
  • 1/4 head of cabbage finely chopped
  • 1/2 red bell pepper finely chopped
  • 3-4 green onions finely sliced

Dressing

  • 1/3 cup Avocado Mayo
  • 1/3 cup Plain Greek Yogurt
  • 2 tsp red wine vinegar
  • 1 tsp dill season with your heart 🙂
  • 1 tbsp Dijon Mustard
  • 1 pinch of sugar
  • Salt and Pepper to taste

Instructions
 

  • First put your garbanzo beans in a large bowl. With a fork or potato masher, mash up about half of the beans. Leave some whole and give it a rough mash.
  • Add the rest of your chopped veggies.
  • Mix up the dressing and pour over the top of the salad. Stir it all together and eat immediately or save it for later in the fridge!
  • This never lasts very long in my kitchen!
