Whole Wheat Blender Pancakes

Make the most delicious, light and fluffy whole wheat pancakes!

Ingredients

  • 1 cup milk
  • 1 cup wheat flour (ground)
  • 2 eggs
  • 2 tbsp honey
  • 2 tbsp coconut oil
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions

  • Put milk and wheat flour in the blender and blend for up to 5 minutes. Keep an eye on it and make sure it doesnt get too hot.
  • Once that is done, add eggs, honey, oil, salt, and baking powder and mix until combined.
  • If it feels a bit runny you can add a small amount of flour to thicken it up. I find that if I blend it long enough in the beginning, it is nice and thick.
  • Pour onto a hot greased griddle
  • Wait until there are bubbles forming in the pancake before you flip. The goal is to only flip it one time.
  • Once you flip it, the pancake will raise up. Let it cook through completely. These take slightly longer to bake than regular pancakes.
  • Serve with your favorite topping. We love fresh strawberries and some syrup!
