Brown Butter Cookies with Toffee and Chocolate Chips

Servings 24 cookies

Ingredients

  • 1 1/2 cup unsalted butter lightly browned and cooled
  • 1 1/2 cup brown sugar packed
  • 2/3 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 tsp sea salt
  • 3 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1 1/2 cup chocolate chips (you can add more or less depending on what you prefer) I like to. use dark chocolate or semi sweet)
  • 1/2 cup toffee bits
  • 1/2 cup chopped reese's peanut butter cups optional
  • 1/2 cup crushed pretzels optional
  • 1 large egg
  • 1 egg yolk

Instructions

  • In a stand mixer or large bowl, add the brown butter and sugars.
  • Mix on medium speed until it is all well combined and begins to look whipped.
  • Add your eggs and vanilla and continue to mix until combined on low speed.
  • Now add your salt, baking soda and flour. Mix until just combined. Do not overmix.
  • Put the dough in the fridge for at least 1 hour. You can keep it overnight as well.
  • When you are ready to bake them preheat your oven to 350 degrees F
  • Line a baking sheet with parchment paper or with a silicone mat.
  • Form 1 1/2 inch balls of dough and place them on the baking sheet and space them apart.
    Bake in the oven for 10-12 minutes. You want them to still be soft in the middle and slightly browned on the edges.
  • Let them cool before eating. The chocolate chunks can burn you if you eat them piping hot!
    Store them in an airtight container.
