Put the water, honey, milk, and butter in a microwave bowl.
Heat in the microwave for 1 minute. Check to see how warm it is.
You want the mixture to be warm enough for the yeast to bloom and not kill it. I end up usually heating it about 1 minute and 30 seconds, but I also add warm water when adding my ingredients.
Once it is heated, add it to a stand mixer and your yeast in. Let it sit while you gather your other ingredients.
Pour 3 cups flour and salt into the water mixture and begin mixing with a dough hook attachment.
Once it has all incorporated, continue to add the flour until it pulls away from the sides, and is not very stick but not stiff. I usually add slightly more than 3.5 cups. Let it knead for about 4 minutes on low speed.
Set it in an oiled bowl and cover with a towel for 15 minutes.Preheat oven to 400 degrees.Once you are ready, separate the dough into 14-15 even pieces and spray a large jelly roll sheet pan with non stick spray or use a silicone baking mat or parchment paper. Take your first piece of dough and roll it like a snake. Add a small amount of flour to the surface so the dough doesnt stick.
Using both hands, carefully tie the strips of dough into knots. You want to pull it so that there are ends on each side and the knot is closed.
Do not pull too hard, just enough to crreate contact with the dough.
Set the knots on the prepared baking sheet and once they are all on the baking pan, let them rise for 20 minutes. Preheat the oven to 400 degrees F
They should almost have doubled in size. Once they have risen, place them in the oven for about 15-20 minutes or until they are golden brown on top.While they are baking, mix your ingredients for the garlic herb butter and set aside. Immediately once they are out of the oven, brush the garlic herb butter onto each of the knots. Keep the on the pan so that the drippings stay on the pan.
Serve warm with your favorite soup or pasta. These are always a hit and for some reason my kids think they are more fun to eat than a regular roll!
Store leftovers in an airtight container and reheat in the oven or for 30 seconds in the microwave.
