Ingredients

  • 2 cups fresh cranberries
  • 20 oz can crushed pineapple
  • 10 oz bag of mini marshmallows
  • 1/4 cup sugar
  • 16 oz tub cool whip topping or whipped topping

Instructions

  • In a food processor, chop your cranberries into small minced pieces.
  • Add them to a large bowl, along with the sugar and pineapple. Stir to combine.
  • Let this sit for at least 30 minutes in the fridge. This will help the sugars be absorbed by the cranberries. You can let it chill overnight if you want. Make sure you keep it in the fridge.
  • You will notice the pineapple and cranberries created a bit of juice, you can drain this. Once you are ready to eat the salad, add the marshmallows and cool whip or whipped topping into the cranberry mixture and fold the ingredients all together.
  • Once everything is mixed together, serve and enjoy!
  • Store leftovers in an airtight container in fridge for up to 3-4 days.
