Make these amazing sourdough aebleskivers and enjoy these fluffy balls of tender pancakes. You can use yours sourdough discard to make these fluffy round pancakes. Enjoy them with jam, fresh fruit, syrups, sauces, whipped cream, and more.
In a large bowl, add the sourdough starter, flour, and 1 1/2 cup. milk and give it a. good stir until all is combined.
Cover with plastic wrap and let sit on the counter overnight.
In the morning, add the remaining ingredients and give it a good stir. If its too thick, you can add more milk to thin it out a bit.
Preheat your cast iron aebleskiver pan and add nonstick spray or butter to the pan holes. Once the pan is hot on medium heat, pour enough batter to fill the holes almost to the top. Let this cook until little bubbles start to show and you can see that the underneath is starting to crisp up.
Next, use 2 chopsticks or the mini forks that comes with the pan to carefully turn the dough voer while shaping it into a ball by holding it up and turning it allowing the holes to fill back up with the remaining uncooked batter.
Allow this to cook until it feels crisp and baked all the way through.
You can also add fillings to the batter once the holes are filled. We like to add a spoon of nutella or cookie butter. You can top them with fresh fruit and whipped cream, jams, spreads, syrups and sauces!
Quick Sourdough Aebleskivers
In a large bowl add the starter, milk, eggs, butter, and sugar. Stir until combined well. Add the salt, soda, baking powder and flour and mix until just combined.
Cook according to directions above.
Store remaining aebleskivers in the fridge and reheat in the air fryer to crisp them up.
