Sourdough Coffee Cake

This amazingly good sourdough coffee cake is a great way to use up

Ingredients

Coffee Cake

  • 1 cup Sugar
  • 3/4 cup millk
  • 3/4 cup canola oil
  • 2 lg eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 3/4 cup sourdough starter
  • 2 1/4 cup all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt

Coffee Cake Filling

  • 3 tbsp melted butter 1
  • 1 tbsp ground cinnamon
  • 1/2 cup flour
  • 1/2 cup packed brown sugar

Coffee Cake Topping

  • 5 tbsp melted butter
  • 3/4 cup flour
  • 1/2 cup brown sugar
  • 1 tbsp ground cinnamon

Optional Icing Drizzle

  • 1/2 cup powdered sugar1-2 tablespoons milk1/8 teaspoon ground cinnamon
  • 1/2 cup powdered sugar
  • 1-2 tbsp milk
  • 1/8 tsp cinnamon
  • 1/4 tsp vanilla extract

Instructions

  • In a large mixing bowl , add all your wet ingredients including milk, oil, eggs, sourdough discard, cinnamon, salt, vanilla extract and sugar.
  • Mix all ingredients until they are well combined. I like to use a whisk.
  • Once all the wet ingredients are combined, add the dry ingredients: the flour and the baking powder.
  • Mix until just combined. Do not overmix this. You do not want to develop the gluten in the flour.
  • Preheat your oven to 350 degrees.
  • You can use an 9 by 9 inch square pan, a 9 by 13 pan or an 11 by 8 pan depending on how thick you want your cake to be. If you want a thinner cake use a 9 by 13, if you want it to be thicker, use a 9 by 9 or similar size.
  • Spray your pan with non stick spray and pour half of the cake batter into the pan. Smooth it out and add an even layer of the filling mixture.
  • Carefully pour the remaining cake batter over the top and spread it over the filling completely.
  • Sprinkle the crumb topping to the entire top of the cake batter.
  • Place in the preheated oven on the center rack. Baking time will depend on what size baking dish you use. If you use a smaller pan like an 9 by 9 or 11 by 8, 50-55 minutes is advised to bake. If you use a 9 by 13, the cake will be thinner so you can cut down on the bake time and go about 30 minutes and then check it for doneness by using a toothpick in the muffle of the cake. If it comes out clean the cake is done. Dont over bake it.
    Check the edge of the cake as well to make sure its not getting too brown.
  • Once it is done you can add an optional drizzle of icing. Add it once it has cooled for about 40 minutes at least.
  • Once the sourdough coffee cake is cooled, cut and enjoy! Store in the fridge onr on the counter at room temperature in an airtight container.
