Sourdough Breakfast Sandwich

This hearty and healthy sourdough breakfast sandwich with eggs, avocado, microgreens, hot honey and sea salt is the perfect balanced breakfast. It is so full of flavor and is a perfectly balanced meal.

Ingredients

  • 1 slice sourdough bread or favorite bread. One slice if you want open face. You can have two sliced if you want a top to your sandwich.
  • 1/4 avocado sliced
  • 2 large eggs
  • 1/4 cup microgreens
  • 1 tbsp hot honey
  • sea salt for garnish

Instructions

  • Toast your bread while you cook your eggs. I like to cook ours in a cast iron skillet. We prefer to make eggs over easy. You can also make scrambled eggs. You can prepare them whichever way you prefer.
  • Once the bread is toasted, brush with some butter. Add the avocado to the toast and gently mash it into the bread. Sprinkle with some sea salt.
  • Add your cooked eggs and top with microgreens and drizzle with hot honey.
  • If you want to top with a second piece of toast you can. I like to eat it open face, without a top.
  • Enjoy this for breakfast, lunch or dinner! Its an amazing meal and one of our favorites!
