30 Minute Roasted Tomato Pasta

This fast and easy roasted tomato pasta is one for the books. With fresh, simply ingredients, this pasta sauce will quickly become a favorite! It takes hardly any effort to make and makes you feel like a chef!

Ingredients

  • 2 cups roma tomatoes approximately 6-9 roma tomatoes
  • 1/4 cup olive oil (slightly extra to to use to drizzle on the tomatoes to roast them
  • 2 tbsp minced garlic or 3-4 garlic cloves
  • 1 tbsp fresh chives chopped
  • 1 pkg ziti, rigatoni or your favorite pasta
  • 1 tbsp basil paste or 2 tbsp fresh chopped basil

Instructions

  • Preheat your oven to 425°
  • Wash and slice your tomatoes in half. Lay a piece of aluminum foil on a pan and lay your tomatoes on top. Drizzle them with olive oil and sprinkle with coarse salt.
  • Put your tomatoes in the oven to roast for about 15 minutes or until they are caramelized and juicy.
  • While the tomatoes are in the oven, bring a pan of water to a boil for the pasta. The rigatoni pasta will take about 11 minutes to cook, so add the pasta before you take out your tomatoes. They will be both cooking at the same time, but you want the pasta sauce done before the pasta is fully cooked.
  • When the tomatoes are ready take them out of the oven and place them in a blender or food processor.
  • While the pasta cooks, add the basil, garlic, basil paste, and chives to the tomatoes and pulse them until they are the desired consistency. My kids like less chunks, so we pulse them a bit more fine.
  • Pour the sauce in the bottom of a serving bowl. Use a strainer to ladle the al dente pasta out of the water and directly onto the roasted tomato sauce.
  • Place all the pasta in the bowl on top of the sauce.
  • Mix it all together and add a ladle of pasta water if needed to make the sauce absorb a bit more into the pasta.
  • Sprinkle with fresh grated parmesan cheese, mozzarella cheese or whatever you like! We also like to add more fresh basil to the top.
  • This is such an easy pasta to make and it is a great way to use fresh garden tomatoes, and an inexpensive way to make your own fresh tomato pasta sauce.
