This easy soup has amazing flavor, is hearty and so comforting in those cold fall and winter months. The combination of spicy sausage along with creamy potatoes, kale and flavorful broth is so satisfying.
In a large stock pot or enamel dutch oven cook the sausage, onion, garlic, celery, and spices on medium high heat until sausage is cooked and the veggies are softened
When they are done, add the chicken broth, potatoes, kale, and pepper to the pot and let it simmer on medium-low heat until the potatoes are soft.
Serve with fresh parmesan cheese and crusty sourdough bread.
Save remaining soup in an airtight container in the fridge.
