Servings 10 bagels

Equipment

  • Mixer

Ingredients

  • 500 grams Bread Flour
  • 350 grams Warm Water
  • 2 tbsp Active dry yeast
  • 30 grams Brown Sugar
  • 10 grams Salt

To Boil the Bagels

  • 2 Quarts Boiling Water
  • 1 tbsp Honey

Instructions

  • Using a stand mixer, add your water, yeast, and sugar.
  • Roughly combine these ingredients.
  • Next add your flour and salt to the mixture and let it combine on low speed. Once it is combined, raise the speed to medium and continue kneading the dough using a dough hook for a couple of minutes and then lower the speed and knead for 8-10 minutes or until the dough is smooth and elastic.
Next you will want to let the dough rise. I like to put mine in a container where I can see the rise, a clear plastic tupperware or large bowl works well. Cover while it rises. You can cover with plastic wrap or a lid.
  • While I am waiting for the dough to rise, I like to cut some squares of parchment paper about the size of a bagel. I will place each bagel on a square that has been sprayed with nonstick spray.
Once it has doubled in size, punch down the dough and place it on a floured surface.
  • Divide the dough into 80-100 gram balls. Shape them each into a ball and set aside. Work quickly through this.
Now stick your thumb through the center to of the dough ball and gently begin to stretch the ball into a bagel shape, rotating it and stretching it into a larger bagel shape. Set each bagel on a parchment square.
  • Cover and let them rise for about 20-30 minutes.
  • While they are rising, start to boil your water/honey mixture in a large pot and get your toppings if you are using them. Also preheat the oven to 400 degrees F.
Once the water is boiling, gently lay two of the bagels in the water at a time trying not to deflate them.
  • Boil them for about 20-30 seconds and then take them out using a slotted spoon and lay them on a grease baking sheet or silicone mat. If you want more chewy bagels you can boil them for up to 2 minutes.
Once you have them all on a parchment lined baking sheet, you can sprinkle toppings such as Everything Bagel seasoning, sesame seeds, dried onions, parmesan cheese, or cinnamon sugar to the top of the dough. I like to brush them with an egg wash before adding toppings.
Bake them for 20-25 minutes ( or until they are golden brown on top) in the oven at 400 degrees F.
Remove them from the oven and let them cool on a wire rack.
Let them cool completely before cutting into them. Store in bread bag for 3-4 days or freeze.

Bagels can seem daunting, but I think if you give it a try you wont be disappointed.

**WORD OF CAUTION***

DO NOT LET THE BAGELS RISE TOO MUCH PRIOR TO BOILING OR THEY COULD DEFLATE AND FLATTEN IN THE OVEN AS THEY WILL BE OVER PROOFED.
