Parmesan Garlic Mashed Potatoes

Ingredients

  • 4-6 medium to large potatoes Use whichever are your favorite. If you prefer red potatoes you will need more because they are smaller.
  • 1/4 cup butter
  • 1/2 cup parmesan cheese
  • 2 tablespoon fresh minced garlic
  • 1/4 cup fresh chopped chives
  • 1/2 cup sour cream
  • 1/4 cup milk or heavy cream
  • salt and pepper to taste

Instructions

  • Peel and chop your potatoes into 1-2 inch sized pieces.
  • Add them to a large pot and cover them with water.
  • Boil the potatoes on medium high heat until the potatoes are fork tender.
  • Drain the potato water and add the potatoes back to your pan.
  • Keep the burner on low for 1 minute to help dry out the potatoes a bit.
  • Add your garlic, butter, sour cream and milk and mash the potatoes. I use a hand held potato masher because we prefer them to be a bit more rustic and not super smooth. You want to add the garlic while the potatoes are hot so that it encourages the flavors of the garlic to wake up.
  • You can also use a hand held mixer or use a stand mixer. It all depends on your preference with your mashed potatoes.
  • Once they are mashed, add your parmesan cheese, chives and salt and pepper to taste. If you want your potatoes more creamy, add more sour cream or milk to make them have a creamier consistency. Serve these with your favorite protein. We love to serve them with my meat loaf, roast or steaks!
  • Store any leftovers in the fridge in an airtight container for 4-5 days. Reheat in the microwave.
