It’s so cold here.  Like so cold the last couple days.  I have been so busy painting some wedding signs for a local wedding I haven’t had much time to work on the blog, let alone make dinner.  So, these are the days when my favorite crock pot recipes come out to play.  One of my go-to meals in the crock pot is my crock pot white chicken chili recipe!  It is so easy, so flavorful and so very comforting on a cold night.

Fall is my favorite time of year and with it comes out our slow cooker, our enamel dutch oven and my Instapot!  I feel like I just don’t want to use any of them in the summer….I barely cook as it is then.  But as winter approaches, the desire to whip up something warm and comforting is most desirable if you ask me.

The only problem I find when using my crock pot is that I have to remember to prepare it in the morning so its ready….its called a “slow cooker” for a reason haha!

This recipe is easy to make, and so affordable too.  Most of us probably have some of the ingredients in our pantries.  Black beans, corn, chili powder, cream cheese and ranch dressing powder are just a few of the ingredients.  Oh, and of course, chicken!

This crock pot meal could not be easier!  You want to start with the chicken, and put them at the bottom of the crock pot.  Add the rest of the ingredients to the top of the chicken, mix together and cook on low for 4-6 hours.  I usually set for 6 hours and check it.  The 2 extra hours wont hurt, so I usually leave it, especially if I will be at work or gone for the day. 

Once it is done, I shred the chicken into the chili, as well as make sure the cream cheese is mixed in well.  The cream cheese is what gives it the creamy goodness.  I love the flavors in this white chicken chili. It’s so good with a dollop of sour cream, a sprinkle of cheese, and a crumble of tortilla chips.  My kids also love squeezing a bit of lime juice on top as well!

Crock Pot White Chicken Chili

Make this delicious white chicken chili in the crock pot, Instapot, or on the stove, whatever your preference! I love using my crock pot to make this recipe. Its comforting, delicious, and easy to make!

Ingredients
  

  • 1 14oz can crushed tomatoes
  • 1 small can chopped green chilis
  • 1 pkg ranch dressing powder mix
  • 8 oz cream cheese
  • 1 14 oz can black beans rinsed and drained
  • 1 14 oz can great northern white beans rinsed and drained
  • 1 bag frozen corn or 1 can of canned corn
  • 2 tsp cumin
  • 1 tsp granulated onion
  • 2 tbsp chili powder
  • 2-3 chicken breasts
  • 8 oz chicken stock optional( I use this at the end if it needs a bit more liquid)

Instructions
 

  • Put the chicken at the bottom of the crock pot
  • pour the beans, corn, cream cheese, chili powder, granulated onion, cumin, ranch dressing powder, green chilis and tomatoes over the top of the chicken
  • Cook on low in the crock pot for 4-6 hours.
  • Once it is done, shred the chicken into the chili
  • top with sour cream, chips, a splash of lime and a bit of grated cheese.
