I am back at it again with another yummy sourdough recipe! Sourdough has been consuming my life these days, and that’s not necessarily a bad thing! Today I want to share this amazing fudgy and chocolatey sourdough discard brownie recipe!

I have always been a Ghirardelli brownie fan, but not this recipe came about. The flavor of these sourdough discard brownies is so dang spot on, chocolatey and gooey with a touch of that sourdough tang. I never thought that the two would go together, but here I am raving about it.

While sourdough discard is nutritious, it is generally not as nutritious as making a true sourdough bread. But it is loaded with health promoting enzymes, probiotics and vitamins.

Yes, you should refrigerate sourdough discard unless you are going to use it right away. If you leave it out, it can go more sour and mold as well. If you leave it out and feed it, it will become another active sourdough start!

Sourdough discard is usable 1-2 weeks from the time you discard it. But remember to keep it in the fridge.

Fudgy Brownies Using Sourdough

Sourdough Brownies Recipe

Ingredients
  

  • 1/2 cup butter unsalted
  • 12 oz favorite chocolate i have used milk chocolate, semi sweet and dark! I prefer semi-sweet chocolate chips.
  • 1/2 cup cocoa powder
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1 egg yolk
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup sourdough discard
  • 1 cup all purpose flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1-2 cups chocolate chips to mix into batter Its nice to use an assorted mixture. I like to use dark or semi sweet mini chips as well as milk chocolate chips.

Instructions
 

  • Preheat oven to 350 degrees F and spray a 9 by 13 pan with nonstick spray. You can also add parchment paper if you choose to do them that way. You can easily pull the entire batch of brownies out of the pan when they have cooled and then cut them.
  • You can also use a 9 by 9 pan but the brownies will be very thick and will need extra time to bake. I find they bake better in a 9 by 13 pan.
  • In a small saucepan on your stove, melt butter over low-medium heat. Add the chocolate and vanilla to the pan and stir until melted. Keep the heat low. Add your cocoa powder and whisk until all combined. Remove from the heat and set aside.
  • In a large mixing bowl add the eggs, brown sugar and regular sugar and mix together until well combined using a whisk. This will take a couple of minutes by hand.
  • Next, add the sourdough discard as well as the chocolate mixture and stir well.
  • Once you are done with that, add the salt, baking powder, flour and chocolate chips until just combined.
  • Pour the brownie batter into the pan and smooth out.
  • Bake in the oven for 35 minutes. Take them out of the oven and let them cool before cutting into them. These are so fudgy and gooey it is easier to handle them when they cool a bit.
  • You can store these in the fridge, freeze them in a container, or eat them all!
