Another day, another fun post! Today I am sharing one of my families favorite fall and winter meals, my tasty broccoli cheese soup! This broccoli cheese soup recipe is easy to make, so flavorful and one of our favorite meals. Keep reading to get the entire recipe!

We love eating soups, stews, chilis, and chowders when it’s cold outside. My husband often jokes that if there is a cloud in the sky, he will come home to chicken noodle soup. I do however have some stipulations when making and eating soup. I want it to be full of flavor, complex and savory.
This broccoli cheese soup definitely hits those marks. It has a couple secret weapons that take the flavor up a notch, adding a touch of heat and zing.
There are a few things that set this broccoli cheese soup recipe apart. First, you want to sautée the onions in some butter. the longer you spend caramelizing these onions the deeper the flavor you will get.
That is the first step, caramelize your diced onions with a bit of butter. Once they are browned, add the rest of your butter and the flour. Now mix it into a paste and let it cook for just a couple minutes.
You will next add the half and half and chicken stock and whisk together with the rue mixture.
Let is come to a boil and start to thicken. Now add the shredded carrots and chopped broccoli and let it cook until the veggies are softened, about 10-15 minutes.
Once they are cooked through, turn off the stove and add your cheese, nutmeg, and my secret ingredients Tabasco sauce and Dijon Mustard. These are what give this broccoli and cheese soup its tasty bite.
I then will flavor with salt and pepper to taste. I never measure this, since it seems to be different every time I make it. Start with a pinch and then taste. I do the same with the Dijon Mustard and Tabasco Sauce. I start with 1-2 tablespoons of the mustard and then a dash or two of the Tabasco Sauce.
This is wonderful with a slice of homemade wheat bread….and I do have to say my wheat bread recipe is my favorite!

Broccoli Cheese Soup Recipe
Make this delicious and comforting broccoli cheese soup recipe tonight! Its so easy to make and has a spicy kick at the end!
- 1 medium onion finely diced
- 1/2 cup butter- Plus 1 tbsp butter
- 1/2 cup flour
- 4 cups half and half
- 4 cups chicken stock
- 2 carrots grated
- 7-8 cups chopped fresh broccoli
- 4 cups shredded cheese
- Tabasco sauce
- dijon mustard
- salt and pepper
- 1/4 tsp nutmeg
Start by melting 1 tbsp of your butter in your pot. Add your finely diced onions and sautee them until they are caramelized. This will develop a lot of yummy flavor.
Once your onions are brown and caramelized, add the rest of your butter and your flour to the mixture. Stir and heat until the mixture becomes a paste. You are making a rue right now.
Once the flour is mixed and has cooked for a couple minutes, add your half and half. Use a whisk to mix it, then add the chicken stock. Keep it on medium heat and let it come to a boil. Continue heating until it boils and starts to thicken.
At this point, add the carrots and broccoli. Let it all cook together until the broccoli and carrots are softened. This takes about 10-15 minutes. Keep an eye on it and don't let it boil over or burn on the bottom. Turn the heat to medium low.
Once the veggies are softened, turn off the heat. Add your cheese and mix until well combined.
At this point you can season as needed. I add 1-2 tbsp dijon mustard and about 1 tsp Tabasco sauce along with the nutmeg and stir to combine. I add a pinch of salt and a pinch of pepper as well. I like to taste it at this point and see if it needs more seasoning. I often will end up adding a bit more of each, but I like to add a little bit at a time in order to prevent over seasoning. I love adding enough Tabasco sauce to give it a kick. My kids love the flavor. It's not hot or spicy, but it has a bite to it.
This is wonderful served with homemade wheat bread or some yummy garlic bread!
This is wonderful the next day after it has had time to blend its flavors even more. My kids love taking this for lunch to school.
