Easy Creamy Tortilla Soup

I am always experimenting in the kitchen making new easy recipes for dinner as well as for breakfast and lunch! I love soups and so does my family. Well, all but one. My son who isnt a fan of soups only likes one. This one. He loves this easy creamy tortilla soup. So, I am finally sharing it with you!

Easy to make creamy tortilla soup with chicken, beans, corn and more. Can be made in  the crock pot or on the stovetop! It is so flavorful!

This creamy tortilla soup can be made in the crock pot or in a pan on the stove. I always find myself making it on the stove, but if you are working during the day away from home or have a busy day, throwing the ingredients in the slow cooker is just as easy. Since I work from home, I find myself making dinner on the stove more often than the slow cooker.

Whether you make this on the stove or slow cooker it is amazing either way!

How to make creamy tortilla soup on the stovetop

  • In a large stockpot or enamel dutch oven add your butter and onion to it. On medium heat, saute the onion for 5 minutes. Add the garlic and continue to saute for another couple of minutes.
  • Add your chicken, chicken broth, rotel, tomato paste, cumin, taco seasoning, cayenne pepper and mix. Let it simmer until your chicken is tender and can be pulled apart with a fork.
  • When the chicken is cooked, pull it out and shred it. Add the shredded chicken back into the pot and stir. If using rotisserie chicken this is the time to put it in as well.
  • Add your beans, corn and cream cheese. Stir until it is all combined and the cream cheese is melted into the soup. You can add shredded cheese to the soup as well and stir until melted.
  • Once the beans and corn are warmed through the soup is ready to eat! Top with your favorite toppings such as cheese, sour cream, tortilla chips, avocado and more!
  • Store leftovers in an airtight container in the fridge. Reheat and enjoy!

How to make creamy tortilla soup in crockpot

  • Put your chicken, chicken broth, garlic, onion, rotel, tomato paste, spices, corn and beans in the crock pot. (you can also add the corn and beans about 1 hour prior to when the soup will be done). Place the cream cheese on top and stir everything together.
  • Let it cook on low for 4-6 hours.
  • Stir it occasionally helping to break up the cream cheese.
  • After about 6 hours the chicken should be tender. Shred it and stir the soup. Add the cheese if you choose to have it. Serve in a bowl with your favorite toppings like cilantro, cheddar cheese, sour cream, crispy tortilla strips and more!

  • 1 can black beans
  • 1 can pinto beans
  • 6 cups chicken broth
  • 1 tsp cumin

  • 8 oz cream cheese
  • 1 1/2 cup shredded cheese optional
  • 1-2 chicken breasts You can also use rotisserie chicken for a even faster preparation

  • Chips
