Its perfectly balanced with spicy sausage, creamy tortellini, herbs, tender carrots and a creamy tomato base. The ingredients blend together to make a hearty and filling soup that is super flavorful and perfect for cold nights.

One Pot Creamy Spicy Sausage and Tortellini Soup

This is the perfect weeknight soup, especially on a cold winter night. The combination of spicy sausage, tender cheese tortellini, herbs, tender carrots in a creamy tomato sauce is the perfect soup.

Ingredients
  

  • 1 pound ground hot italian sausage
  • 3 carrots peeled and diced
  • 1 large white onion finely diced
  • 1 tablespoon minced fresh garlic
  • 6 cups chicken stock
  • 29 oz canned crushed tomatoes
  • 16 oz cheese tortellini
  • 1 cup heavy cream
  • 1/2 tsp dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • parmesan cheese for garnish
  • red pepper flakes optional ( if you want to use milk sausage you can add a small amount of pepper flakes to add spice)

Instructions
 

  • Inn a large stock pot or enamel dutch oven brown your sausage on medium high heat. When it is about half done, add your onions and continue to cook until they are translucent.
  • Turn the heat down to medium and add your garlic. Sautee for a couple of minutes in the pan.
  • Next add your chicken broth, oregano, basil, rosemary and carrots and boil for about 10 minutes.
  • Add your tomatoes and continue to simmer until the carrots are tender.
  • Next add your tortellini and cook on medium until the pasta is done. If using fresh pasta it will only take a few minutes.
  • Turn the heat to low and add your heavy cream. Give it a good stir and taste for seasoning. I find I dont need anything extra in it at this point.
  • Serve in a bowl and top with parmesan cheese. Serve alongside some garlic bread or bread sticks. Check out my favorite recipes~
  • Store cooled soup in an airtight container in the fridge. Reheat on the stove or in the microwave.
