Ingredients

  • 1 cup water
  • 1/2 cup milk
  • 2 tablespoon butter
  • 2 tablespoon honey
  • 1 teaspoon salt
  • 3.5-4 cups all purpose flour
  • 1 tablespoon yeast

Garlic Herb Topping

  • 1/4-1/2 cup melted butter
  • 1/2 cup parmesan cheese
  • 1 tablespoon minced garlic
  • 2-3 tablespoons assorted fresh herbs We like to use fresh basil, parsley, chives, whatever we have fresh.

Instructions

  • Put the water, honey, milk, and butter in a microwave bowl.
  • Heat in the microwave for 1 minute. Check to see how warm it is.
  • You want the mixture to be warm enough for the yeast to bloom and not kill it. I end up usually heating it about 1 minute and 30 seconds, but I also add warm water when adding my ingredients.
  • Once it is heated, add it to a stand mixer and your yeast in. Let it sit while you gather your other ingredients.
  • Pour 3 cups flour and salt into the water mixture and begin mixing with a dough hook attachment.
  • Once it has all incorporated, continue to add the flour until it pulls away from the sides, and is not very stick but not stiff. I usually add slightly more than 3.5 cups. Let it knead for about 4 minutes on low speed.
  • Set it in an oiled bowl and cover with a towel for 15 minutes.
  • Preheat oven to 400 degrees.
  • Once you are ready, separate the dough into 15 even pieces and spray a 9 by 13 baking dish with non stick spray or butter.
  • Roll your pieces into balls, and place them in the pan, 3 wide, 5 tall.
Cover and let rise for 15 minutes.
  • Put in the oven, and bake until golden brown on top, about 15-20 minutes. They will double in size.
  • Once they are done baking its time to add the herb/butter/parmesan topping. You can use a pastry brush or a spoon to spread this on the tops of the rolls. Cover all the rolls and enjoy!
  • Eat them hot or cold. They are amazing, buttery soft and so flavorful with the herb topping.
  • Store in an airtight container and reheat in a microwave or oven.

Tips & Tricks

  • This roll dough will be slightly sticky but will also hold together well. You want the dough to pull away from the sides of the bowl and hold together. It should also be smooth. If it is not, consider kneading it for a few more minutes.
  • The garlic herb butter can be adjusted and customized to what you prefer. I like to use fresh basil, chives and parsley. You can make many variations of this type of roll. Add flaky sea salt, red pepper flakes, and more.
  • Make sure to sprinkle flour on your counter before pouring out your dough to prevent it sticking. You do not want a lot of flour though, just a lightly floured surface because it will prevent you from making the smooth balls that form using the friction of the counter top.
  • These are the perfect side for Thanksgiving or Christmas dinner too!
  • For a more crusty bottom you can bake them in a cast iron skillet.

The flavor of these garlic butter and herb dinner rolls are unmatched. They are a comforting addition to your next homemade meal. I often find it so much more rewarding to make your own food and there is a sense of empowerment in creating and providing for yourself and those around you.
