30 Minute Homemade Roasted Tomato Pasta

These days, I am working feverishly while the kids are in school, trying to get all my ducks in a row before they get home so I can focus on them in the evenings.  I am also trying to simplify some of our meals, creating some that take no time to make, are easy and taste amazing!  This 30 minute homemade roasted tomato pasta is one of my kids absolute favorites, and its so very easy to make!

Since our garden is in full bloom we are slowly getting fresh tomatoes here and there.  Just enough to make a tasty pasta sauce.  This roasted tomato pasta sauce only has a couple of good ingredients: fresh garden tomatoes, olive oil, garlic, basil, and chives.  Its simple, but so flavorful!

The secret to making this roasted tomato pasta in less than 30 minutes is to have a couple things going at once.

First, turn on your oven and preheat it to 425 degrees.  I like to slice my Roma tomatoes in half drizzle them in olive oil and put them into the oven.  While I am preparing my tomatoes, I fill my large pot with water and turn it on high on the stove.  This way the water can be boiling while the tomatoes are roasting.

It only takes about ten minutes to roast the tomatoes.  As soon as the water is boiling, add the pasta (you can choose whatever kind you like.)  Once I put the pasta in the water, it is time to blend up your sauce.

I pull the tomatoes out of the oven and put them in the blender along with any juice on the pan.  I add the olive oil, garlic, basil and chives to the blender and pulse the mixture until it is the consistency you want.  My kids like less chunks, so I pulse it a bit more.  

This is the basil paste that I use when I do not have fresh basil.  I love using this, it is so convenient and easy to use!

I then put the roasted tomato sauce in a large bowl.  Once the pasta is cooked al dente, I use a strainer to put the pasta right into the bowl with the sauce.  Once all the pasta is in the bowl, I stir it around and add a small amount of pasta water to the mixture if it is needed.

We like to add fresh basil, parmesan, and even some mozzarella to the pasta. You can add whatever you like. We sometimes even add a dollop of ricotta cheese to the top to mix in as well.

30 Minute Roasted Tomato Pasta

This fast and easy roasted tomato pasta is one for the books. With fresh, simply ingredients, this pasta sauce will quickly become a favorite! It takes hardly any effort to make and makes you feel like a chef!

Ingredients
  

  • 2 cups roma tomatoes approximately 6-9 roma tomatoes
  • 1/4 cup olive oil (slightly extra to to use to drizzle on the tomatoes to roast them
  • 2 tbsp minced garlic or 3-4 garlic cloves
  • 1 tbsp fresh chives chopped
  • 1 pkg ziti, rigatoni or your favorite pasta
  • 1 tbsp basil paste or 2 tbsp fresh chopped basil

Instructions
 

  • Preheat your oven to 425°
  • Wash and slice your tomatoes in half. Lay a piece of aluminum foil on a pan and lay your tomatoes on top. Drizzle them with olive oil and sprinkle with coarse salt.
  • Put your tomatoes in the oven to roast for about 15 minutes or until they are caramelized and juicy.
  • While the tomatoes are in the oven, bring a pan of water to a boil for the pasta. The rigatoni pasta will take about 11 minutes to cook, so add the pasta before you take out your tomatoes. They will be both cooking at the same time, but you want the pasta sauce done before the pasta is fully cooked.
  • When the tomatoes are ready take them out of the oven and place them in a blender or food processor.
  • While the pasta cooks, add the basil, garlic, basil paste, and chives to the tomatoes and pulse them until they are the desired consistency. My kids like less chunks, so we pulse them a bit more fine.
  • Pour the sauce in the bottom of a serving bowl. Use a strainer to ladle the al dente pasta out of the water and directly onto the roasted tomato sauce.
  • Place all the pasta in the bowl on top of the sauce.
  • Mix it all together and add a ladle of pasta water if needed to make the sauce absorb a bit more into the pasta.
  • Sprinkle with fresh grated parmesan cheese, mozzarella cheese or whatever you like! We also like to add more fresh basil to the top.
  • This is such an easy pasta to make and it is a great way to use fresh garden tomatoes, and an inexpensive way to make your own fresh tomato pasta sauce.
