If you are following me on Instagram you may know that I completely overhauled my diet about a year ago, and since then have dove deeper into eating for my body and more recently, I have been focusing on the gym, and especially weight lifting. I have been studying and with trial and error, figuring out my macros. I am learning that as I lift more, I need to eat more protein. Keeping my protein up each day can be a bit of a challenge sometimes. So I have been focusing on meal prepping and making things that are easy and quick. Recently I started experimenting with chicken salad, and created this amazing healthy chicken salad that tastes amazing, has oodles of protein, veggies, and more. Its delicious on breads, in a wrap, or with crackers!
I tend to eat this healthy chicken salad with my Miltons Gluten Free Crackers. They are amazing and go perfectly with this chicken salad. This would also be amazing lettuce wrap. This healthy salad is one of my favorite ways to get my protein in!
I love it when I come up with healthy recipes that also taste amazing. Its empowering to find things that I not only should eat, but want to eat! Classic chicken salad is full of mayo, sour cream and more. There are small things you can do to change the macros of chicken salad and this one tastes so amazing with some items you might not expect. The big star of this dish is fresh dill. I tell you it makes this healthy chicken salad what it is. If you are a fan of greek food, and in particular, tzatziki sauce, then you will love this salad!
In addition to fresh dill it has something else you might not expect, fresh chopped cabbage. This gives the chicken salad so much crunch and the flavors go really well together. I have tried it with celery and like that as well but I do love it with the cabbage more! Depending on the amount of cabbage you add, you could simply eat this right out of the bowl!
So lts talk about all the other ingredients I use in this chicken salad. You can easily meal prep these ingredients by pre chopping the cabbage, and by cooking the chicken prior as well.
The main ingredients of this salad are:
- dijon mustard
- plain greek yogurt
- baked chicken (you can use canned chicken if you want less work but I love the baked chicken because I add my favorite seasoning to it while it bakes)
- avocado mayo
- red onion
- fresh herbs such as dill and parsley
- minced fresh garlic
So let me talk about how I make this easy chicken salad recipe, its so easy!
First, I like to butterfly my chicken breasts. I use two chicken breasts and butterfly them. I then lightly season them with some Kinder Buttery Chicken seasoning. I use my air fryer to cook the chicken. It takes about 25 minutes to cook them.
While the chicken is cooking, I prep the rest of the ingredients. First, I chop the cabbage into small bite sized pieces. I do the same with my red onion, and my herbs(dill and parsley) I have often made this without parsley so it isnt a necessity for the recipe. But you do need dill! It is the best part of the salad. I add the fresh minced garlic, dijon mustard, greek yogurt and mayo, and salt and black pepper all into one large bowl.
Once the chicken is cooked, I let is cool for about 5 minutes and then I chop it into small bite sized pieces. You can cut them any size you like, but I like it chopped nice and small.
Once the cooked chicken has cooled down to room temperature, you can add it to the rest of the ingredients and give it all a good stir. This can be eaten right away or put in the fridge to eat later. Its even better the second day but I cant tell you after that because it never makes it that long in my home. My 10 year old daughter absolutely loves this creamy chicken salad.
Healthy Chicken Salad with Fresh Dill
Make this easy, flavorful and healthy chicken salad. It tastes amazing, is full of protein, and has tons of healthy ingredients!
- 2 large Large boneless/skinless chicken breast I like to butterfly mine
- Kinder Buttery Chicken Seasoning optional
- 2 cups Finely chopped cabbage you can also use diced celery(I prefer cabbage)
- 1-2 Finely diced shallots or 1/4 red onion
- 2 tbsp Chopped fresh dill
- 2 tbsp Chopped fresh parsley optional
- 2 tbsp Dijon mustard
- 1/3 cup Avocado Mayo
- 1.2 cup Plain Greek Yogurt
Some of these tips are optional but are what I use to make this an easy meal with little prep.
I first butterfly my chicken, add my favorite seasoning, the Kinder Buttery Steakhouse.
I use my air fryer to cook my chicken. It takes about 15 minutes to cook the chicken.
While the chicken is cooking, prep your other ingredients in a large bowl and set them aside.
Once the chicken is done, let it cool. Once it is cool, chop the chicken up and add it to the bowl. Mix all the ingredients and eat! This is great with crackers, as a lettuce wrap, or as a wrap with a tortilla. This is a great source of protein and tastes so good! The dill makes all the difference!
This recipe is a great way to use leftover chicken. You could also use a leftover rotisserie chicken. I like to use boneless skinless chicken breasts in this greek yogurt chicken salad.
This salad is a high protein option that tastes amazing and is so easy to make. I really struggle finding healthy lunch options that are full or protein and also veggies. This would be amazing served on a bed of lettuce. If you add extra cabbage, you could literally eat this with a spoon! I love to eat it with gluten free crackers. It would make a great wrap and with that secret ingredient, dill, it gives it a fresh summer flavor.
You could meal prep with this chicken salad. You could divide it into portions and add it to mason jars to store in the fridge. You can also store it in an airtight container like tupperware and store it in the fridge. If you are working on a low carb diet, this is a perfect recipe to add into your meal rotation.
