They make super soft pumpkin cookies and you can choose to add chocolate chips or frost them with my yummy cream cheese frosting! I love making pumpkin chocolate chip cookies in the fall, and I rarely have time to spend a couple hours baking up cookies, so I needed something super easy and quick. This is a fall favorite of ours and when we are craving sweet treats, this is usually the one we go for.

When I want to make cookies, I want to be able to make them quickly and easily. I often like to make them in the evening for a treat for the kids but I don’t want to be up all night making them either! This pumpkin cookie recipe is so easy and they can be made in no time at all! Let’s get real, most of us just don’t have the time to spend baking all day, even if it is the more fun option.

As soon as the crisp autumn air hits, and pumpkin season begins, we are baking these cookies at least once a week. They are easy, economical and are a hit in my kids lunches for school. As my kids have grown, they only want to take lunches instead of buying school lunch. I have been trying hard to create good, healthy lunches for them with more homemade elements. These might not be the most healthy, but they aren’t bad! But, I know what is in them and that makes me feel better.

Whats even better? They are soft, fluffy, and decadent! I love my cookies to be soft and tender. I am not a fan of the crispy cookies, and these are definitely not that!

The secret to these cookies is that they are pumpkin chocolate chip cookies with cake mix! I have made these for years using 2 simple ingredients, but lately I have changed it up adding eggs as well as a few other things. Let me explain.

You can easily make pumpkin chocolate chip cookies with a spiced cake mix and pumpkin puree. I have found the flavor to be a bit strong for me, so I have made adjustments. Instead of using a spiced cake mix, I use a white cake mix, and add a different ratio of spices including cinnamon, cloves, nutmeg, and ginger. I have found this to create a more delicate flavor which I am a fan.

How to make Pumpkin Chocolate Chip Cookies:

It’s so easy, really.

You want to take the canned pumpkin puree, cake flour mixture, eggs, and spices into a medium bowl( or large mixing bowl if you want to double the recipe which I often do) and combine. This dough is easy to combine with a wooden spoon. You do not need to use an electric mixer or hand mixer. Once its combined, you can add your chocolate chips or omit them if you want to ice the cookies. I love using Ghiridelli chocolate chips or Guittard chocolate chips because they are bigger chips. They are also just the best!

Once they are mixed in, drop dough in about 2 inch sized balls ( you can use a medium cookie scoop) onto a parchment paper lined baking sheet or prepared baking sheets and bake them in the oven at 325 degrees for between 12-14 minutes.  There should be enough cookie dough for 24 cookies depending on the size you make.

Pull them out of the oven and take them off the cookie sheet carefully. Let them cool on a wire rack or on a couple of paper towels. They are delicious out of the oven, but I would recommend waiting about 10 minutes to eat them.

The easy pumpkin cookies are also delicious the next day! I like to store them in an airtight container at room temperature. I have also stored them in the fridge and had similar results.

Ingredients
  

  • 1 white cake mix OR SPICED CAKE MIX If you use a spiced cake mix, this recipe only needs the cake mix, eggs, and pumpkin puree.
  • 3 eggs
  • 3 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1 bag chocolate chips
  • 1 can pumpkin puree

Instructions
 

  • Preheat oven to 325°
  • Put the eggs, cake mix, and pumpkin puree in a bowl and mix thoroughly with a wooden spoon. (If you use a white cake mix, add the spices at this time, if you choose to use a spiced cake mix, you do not need to add the extra spices)
  • Mix is 3/4-1 bag of chocolate chips. I love using Ghirradelli chocolate chips, because they are bigger and so good! We like a lot of chocolate chips in our cookies, so if you like less, put less in.
  • Bake for 12-14 minutes until firm but still soft.
    Let cool for 10 minutes if you can wait that long! Sometimes I end up eating them right out of the oven! One recipe makes approximately 24 cookies.
